Main Ingredients
- Firm tofu, tender bamboo shoots (Lei bamboo shoots, winter bamboo shoots), oyster mushrooms, celery (optional)
- Braised pork (or salted pork) cooked by mom
Seasonings
- Garlic cloves, soy sauce
Preparation Steps
- Cut firm tofu into small cubes;
- Chop tender bamboo shoots into small pieces;
- Rinse oyster mushrooms and tear them into small pieces for later use.
Cooking Steps
- Heat oil in a pan;
- Add garlic and pork, then add tofu and stir-fry briefly;
- Pour in soy sauce, stir, and simmer for 1–2 minutes;
- Add bamboo shoots and continue simmering for another 2 minutes;
- Transfer the mixture to a small pot;
- Add some water until the tofu is submerged;
- Add oyster mushrooms;
- Continue cooking for 20 minutes;
- Season to taste, then serve after a few more minutes.
Tip
Use spring bamboo shoots, not winter bamboo shoots. The flavor of fresh shoots after spring rain is unbeatable.
