Main Ingredients
- Spring bamboo shoots
- Mushrooms
- Cured pork
- Long-grain fragrant rice
Seasonings
- Soy sauce, oyster sauce
Preparation Steps
- Soak the rice in warm water for half an hour in advance.
- Slice the spring bamboo shoots or flatten and cut them crosswise.
- Slice the mushrooms.
- Blanch all ingredients together.
- Slice the cured pork and set aside.
Cooking Steps
- Heat the pot, add a little oil once it's warm, then stir-fry the cured pork until fragrant.
- Add the spring bamboo shoots and mushrooms, stir-fry for a while, then season with soy sauce, oyster sauce, and a pinch of salt.
- Add the rice and water to the pot, ensuring the water level is about 1 cm above the ingredients, and mix well.
- Bring to a boil, then reduce to low heat and simmer for 20 minutes.
- Add seasonings before serving and mix thoroughly.
Tip
Use spring bamboo shoots, not winter bamboo shoots. The fresh shoots after spring rain have a unique flavor.
