Main Ingredients

  • Spring bamboo shoots
  • Mushrooms
  • Cured pork
  • Long-grain fragrant rice

Seasonings

  • Soy sauce, oyster sauce

Preparation Steps

  1. Soak the rice in warm water for half an hour in advance.
  2. Slice the spring bamboo shoots or flatten and cut them crosswise.
  3. Slice the mushrooms.
  4. Blanch all ingredients together.
  5. Slice the cured pork and set aside.

Cooking Steps

  1. Heat the pot, add a little oil once it's warm, then stir-fry the cured pork until fragrant.
  2. Add the spring bamboo shoots and mushrooms, stir-fry for a while, then season with soy sauce, oyster sauce, and a pinch of salt.
  3. Add the rice and water to the pot, ensuring the water level is about 1 cm above the ingredients, and mix well.
  4. Bring to a boil, then reduce to low heat and simmer for 20 minutes.
  5. Add seasonings before serving and mix thoroughly.

Tip

Use spring bamboo shoots, not winter bamboo shoots. The fresh shoots after spring rain have a unique flavor.
