Ingredients
- Half or one bitter melon;
- Eggs, beaten in a bowl;
Seasonings
- Olive oil, as needed;
- Pepper & salt, to taste.
Steps:
- Wash the bitter melon, then dice it into small pieces and set aside;
- Bring water to a boil, then add the diced bitter melon;
- Once the water boils again, pour in the beaten eggs.
Tip
After dicing the bitter melon, using a garlic mincer to further chop it into smaller pieces will enhance the flavor of the soup.
