bitter gourd and egg soup

Ingredients

  • Half or one bitter melon;
  • Eggs, beaten in a bowl;

Seasonings

  • Olive oil, as needed;
  • Pepper & salt, to taste.

Steps:

  1. Wash the bitter melon, then dice it into small pieces and set aside;
  2. Bring water to a boil, then add the diced bitter melon;
  3. Once the water boils again, pour in the beaten eggs.

Tip

After dicing the bitter melon, using a garlic mincer to further chop it into smaller pieces will enhance the flavor of the soup.
