Main Ingredients

Preparation Steps
- Blanch the fish head in boiling water for 3 minutes.
- Remove and drain the water, then set aside for cooking.
Cooking Steps
- Heat oil in a pan, then add the drained fish head to the hot oil.
- After frying for a while, pour in the cooking wine.
- Add a small amount of minced garlic and onion to enhance aroma and sweetness.
- After 2–3 minutes, add the tofu and continue cooking over high heat.
- Cook for another 2–3 minutes to allow the flavors of the tofu and fish to blend.
- Add water and simmer for about 20 minutes.
- Add celery, enoki mushrooms, and sliced onion.
- After 2–3 minutes, season with salt, MSG, and other condiments.
- Remove from heat and serve.
