Main Ingredients

  • Fresh fish head
  • Tofu

Supplementary Ingredients

  • Onion, garlic
  • Celery
  • Enoki mushrooms (optional)

Seasonings

  • Salt
  • Cooking wine
  • White pepper (optional)

Preparation Steps

  1. Blanch the fish head in boiling water for 3 minutes.
  2. Remove and drain the water, then set aside for cooking.

Cooking Steps

  1. Heat oil in a pan, then add the drained fish head to the hot oil.
  2. After frying for a while, pour in the cooking wine.
  3. Add a small amount of minced garlic and onion to enhance aroma and sweetness.
  4. After 2–3 minutes, add the tofu and continue cooking over high heat.
  5. Cook for another 2–3 minutes to allow the flavors of the tofu and fish to blend.
  6. Add water and simmer for about 20 minutes.
  7. Add celery, enoki mushrooms, and sliced onion.
  8. After 2–3 minutes, season with salt, MSG, and other condiments.
  9. Remove from heat and serve.
