- Razor clams, sponge gourd
Seasonings
- Scallions, ginger, garlic, cooking wine, chopped chili sauce, chili peppers
Preparation Steps
- Rinse the razor clams. Peel the sponge gourd and cut it into rolling wedges.
- Crush the garlic and mince it.
Cooking Steps
- Heat oil in a pan and add the minced garlic.
- Once the pan is hot, add the razor clams and sear them over high heat. Pour in the cooking wine. (Flames may appear!)
- Add a small amount of water, then add ginger slices, chopped chili sauce, and chili peppers. Stir-fry briefly and cover the pan with a lid.
- Once the water boils, add the sponge gourd and scallions.
- Season with salt and MSG, simmer for a short while, then serve.
