Ingredients

  • Razor clams, sponge gourd

Seasonings

  • Scallions, ginger, garlic, cooking wine, chopped chili sauce, chili peppers

Preparation Steps

  1. Rinse the razor clams. Peel the sponge gourd and cut it into rolling wedges.
  2. Crush the garlic and mince it.

Cooking Steps

  1. Heat oil in a pan and add the minced garlic.
  2. Once the pan is hot, add the razor clams and sear them over high heat. Pour in the cooking wine. (Flames may appear!)
  3. Add a small amount of water, then add ginger slices, chopped chili sauce, and chili peppers. Stir-fry briefly and cover the pan with a lid.
  4. Once the water boils, add the sponge gourd and scallions.
  5. Season with salt and MSG, simmer for a short while, then serve.
