Main Ingredients

Preparation Steps

  1. Make a cut along the breastbone of the chicken.
  2. Prepare the dry rub: Crush cumin, Sichuan peppercorns, fennel seeds, and coriander seeds.
  3. Prepare the wet rub: Take half of the dry rub, add garlic, scallions, and chili peppers, then continue pounding. After pounding, mix in light soy sauce.
  4. Apply the wet rub to the inner side of the chicken and the dry rub to the skin.
  5. Place the chicken in the refrigerator to marinate overnight, ensuring the meat stays dry.

Cooking Steps

  1. Preheat the oven for 10 minutes.
