Ingredients
- Clams, Litsea cubeba (May Chang)
Seasonings
- Scallions, ginger, garlic, chili peppers, lemongrass, onion
- Cooking wine, salt, monosodium glutamate (MSG)
Preparation Steps
- Rinse the clams thoroughly.
- Soak the Litsea cubeba in water in advance.
Cooking Steps
- Heat oil in a pan, then add garlic, Litsea cubeba, lemongrass, and chili peppers to stir-fry until fragrant.
- Once the pan is hot, add the clams and briefly sear them over high heat. Pour in cooking wine. (Flame on!)
- Add a small amount of water, then add ginger slices and scallion segments. Stir-fry briefly and cover the pan with a lid.
- Season with salt and MSG. Let it simmer for a while before serving.
