Ingredients

  • Clams, Litsea cubeba (May Chang)

Seasonings

  • Scallions, ginger, garlic, chili peppers, lemongrass, onion
  • Cooking wine, salt, monosodium glutamate (MSG)

Preparation Steps

  1. Rinse the clams thoroughly.
  2. Soak the Litsea cubeba in water in advance.

Cooking Steps

  1. Heat oil in a pan, then add garlic, Litsea cubeba, lemongrass, and chili peppers to stir-fry until fragrant.
  2. Once the pan is hot, add the clams and briefly sear them over high heat. Pour in cooking wine. (Flame on!)
  3. Add a small amount of water, then add ginger slices and scallion segments. Stir-fry briefly and cover the pan with a lid.
  4. Season with salt and MSG. Let it simmer for a while before serving.
