Main Ingredients
- Tender mulberry leaves
- Straw mushrooms, preserved eggs, minced meat
- Garlic cloves, shredded ginger
- Goji berries

Preparation Steps
- Remove the tough stems from the mulberry leaves and wash them thoroughly.
- Blanch the leaves in boiling water with a little oil and salt for a few minutes, then remove and place at the bottom of a serving bowl.
- Peel and crush the garlic cloves, and shred the ginger.
- Cut the preserved eggs into small pieces.
- Halve the straw mushrooms.
- Boil a kettle of water and set aside.
Cooking Steps
- Heat oil in a pan, then sauté the garlic cloves and shredded ginger until fragrant.
- Add the minced meat and stir-fry until it turns dry.
- Add the straw mushrooms and preserved eggs, stir-frying briefly.
- Pour in the boiled water and simmer to create a rich, white broth.
- Add a few goji berries and continue cooking.
- Simmer over low heat for five minutes, then season with a little salt and chicken bouillon. Pour the soup over the mulberry leaves in the bowl.
- Serve immediately.
Tip
Using boiled water along with straw mushrooms will yield a rich, white broth—cold water won't achieve the same effect.
