Main Ingredients

  • Tender mulberry leaves
  • Straw mushrooms, preserved eggs, minced meat
  • Garlic cloves, shredded ginger
  • Goji berries

Seasonings

  • Salt, oil, chicken bouillon

Preparation Steps

  1. Remove the tough stems from the mulberry leaves and wash them thoroughly.
  2. Blanch the leaves in boiling water with a little oil and salt for a few minutes, then remove and place at the bottom of a serving bowl.
  3. Peel and crush the garlic cloves, and shred the ginger.
  4. Cut the preserved eggs into small pieces.
  5. Halve the straw mushrooms.
  6. Boil a kettle of water and set aside.

Cooking Steps

  1. Heat oil in a pan, then sauté the garlic cloves and shredded ginger until fragrant.
  2. Add the minced meat and stir-fry until it turns dry.
  3. Add the straw mushrooms and preserved eggs, stir-frying briefly.
  4. Pour in the boiled water and simmer to create a rich, white broth.
  5. Add a few goji berries and continue cooking.
  6. Simmer over low heat for five minutes, then season with a little salt and chicken bouillon. Pour the soup over the mulberry leaves in the bowl.
  7. Serve immediately.

Tip

Using boiled water along with straw mushrooms will yield a rich, white broth—cold water won't achieve the same effect.
