pickled oysters

Ingredients

  • Half a catty of oysters (¥35 per catty). Choose small, sun-dried oysters for a richer flavor.

Seasonings

  • Salt, sugar, vinegar, light soy sauce, chili peppers

Steps

  1. Rinse the oysters with clean water and drain thoroughly.
  2. Add one small teaspoon of salt and one and a half teaspoons of sugar.
  3. Add one and a half tablespoons of vinegar and one tablespoon of light soy sauce.
  4. Cut two chili peppers into three segments each and add them.
  5. Mix well, cover with plastic wrap, and let it sit for 30 minutes.
