Ingredients
- 4-5 potatoes
- Mudfish vegetable (local Fujian dialect, scientific name: Artemisia lactiflora)
Seasonings
- 1/2 teaspoon salt
Preparation Steps
- Wash the potatoes and cut them in half;
- Place them in a blanching pot and boil for 15-20 minutes;
- Remove and rinse with cold water, then peel the potatoes;
- Remove the thick stems from the mudfish vegetable and cut into small sections;
Cooking Steps
- Heat oil in a pan, add the softened potatoes, and mash them with a spoon;
- Add a small amount of water to create a paste-like consistency;
- Add the mudfish vegetable and stir-fry evenly;
- Continue cooking for about 3 minutes, then serve.
