Ingredients

  • 4-5 potatoes
  • Mudfish vegetable (local Fujian dialect, scientific name: Artemisia lactiflora)

Seasonings

  • 1/2 teaspoon salt

Preparation Steps

  1. Wash the potatoes and cut them in half;
  2. Place them in a blanching pot and boil for 15-20 minutes;
  3. Remove and rinse with cold water, then peel the potatoes;
  4. Remove the thick stems from the mudfish vegetable and cut into small sections;

Cooking Steps

  1. Heat oil in a pan, add the softened potatoes, and mash them with a spoon;
  2. Add a small amount of water to create a paste-like consistency;
  3. Add the mudfish vegetable and stir-fry evenly;
  4. Continue cooking for about 3 minutes, then serve.
