Ingredients

  • Pork belly
  • Young ginger

Seasonings

  • Scallions, ginger, garlic, chili peppers
  • Mom’s chili sauce, Pixian doubanjiang (fermented broad bean paste)
  • Cooking wine, soy sauce, oyster sauce, salt, MSG

Preparation Steps

  1. Slice the pork belly.
  2. Slice the young ginger.
  3. Prepare scallions, ginger, garlic, chili peppers, Mom’s chili sauce, and Pixian doubanjiang.

Cooking Steps

  1. Heat oil in a pan, then stir-fry scallions, ginger, garlic, and chili peppers until fragrant.
  2. Once the pan is hot, add the sliced pork belly and sear over high heat. Pour in cooking wine. (Flames may appear!)
  3. Add a small amount of water, then add the ginger slices. Stir-fry briefly and cover the pan with a lid.
  4. Add Mom’s chili sauce, Pixian doubanjiang, soy sauce, and a bit of oyster sauce. Stir-fry until well combined.
  5. Season with salt and MSG. Simmer for a short while, then serve.
