Ingredients
- Pork belly
- Young ginger
Seasonings
- Scallions, ginger, garlic, chili peppers
- Mom’s chili sauce, Pixian doubanjiang (fermented broad bean paste)
- Cooking wine, soy sauce, oyster sauce, salt, MSG
Preparation Steps
- Slice the pork belly.
- Slice the young ginger.
- Prepare scallions, ginger, garlic, chili peppers, Mom’s chili sauce, and Pixian doubanjiang.
Cooking Steps
- Heat oil in a pan, then stir-fry scallions, ginger, garlic, and chili peppers until fragrant.
- Once the pan is hot, add the sliced pork belly and sear over high heat. Pour in cooking wine. (Flames may appear!)
- Add a small amount of water, then add the ginger slices. Stir-fry briefly and cover the pan with a lid.
- Add Mom’s chili sauce, Pixian doubanjiang, soy sauce, and a bit of oyster sauce. Stir-fry until well combined.
- Season with salt and MSG. Simmer for a short while, then serve.
